Located in Kumamoto City's Chuo Ward, "Kaminouradori Sekkasanbou" is a soba restaurant that serves fine-quality handmade soba noodles.
In addition to our main menu of soba dishes, we also have a delicious a la carte menu and a selection of Japanese sake. Our restaurant has even been selected for the Michelin Guide Bib Gourmand.
Our owner blends carefully selected buckwheat seeds to grind them into flour here at the restaurant, which gives our soba a distinctly rich aroma. When you come to our restaurant for the first time, be sure to try our kake soba (soba noodles in hot broth) and zaru soba (soba noodles on a bamboo basket with dipping sauce) to experience our soba's flavor. If you are more experienced with soba noodles, then we recommend our seasonal menu.
In addition, we have a set that offers a firsthand experience of Japan's unique "soba-mae culture" (the tradition of enjoying a drink before soba noodles are served), and our lineup of Japanese sake changes with each season.

Using buckwheat flour ground in-house,
our highly experienced artisans produce our soba noodles by hand.
The aroma and flavor of buckwheat seeds vary depending on the season, where they were grown, and other factors. Here at our restaurant, our owner blends a variety of different buckwheat seeds to serve delicious soba noodles at all times.
The amount of natural spring water we use to mix our buckwheat flour is adjusted according to the temperature and humidity conditions on that day. The buckwheat flour dough is kneaded directly by hand, and a rolling pin is used to expertly roll it out. From there, it is thinly cut into even strips that make for a smooth texture to enjoy.

For those of you visiting us for the first time, we recommend starting with our kake soba (soba noodles in hot broth) or our zaru soba (soba noodles on a bamboo basket with dipping sauce). These simple ways to eat soba noodles let you enjoy the rich aroma of the buckwheat.
Our soba dipping sauce is made from a base of dashi stock prepared from thick-cut katsuobushi (fermented skipjack tuna) and kelp. From there, we add different ingredients depending on whether the soba noodles are going to be served cold or hot. This way we can adjust the dipping sauce to best enhance the flavor of the noodles.
We also have a variety of other menu items featuring soba noodles.
The popular menu item at our restaurant is the "Duck Broth Zaru Soba," which is a serving of soba noodles over a bamboo basket paired with a duck broth-based dipping sauce. The duck meat is cooked into the broth for an extended period and then combined with the sauce to make for a luxurious taste that blends in a deliciously savory umami flavor. We also recommend adding in your preferred amount of black shichimi pepper blend. Additionally, we have a variety of other menu items, including tororo soba (soba noodles with grated Japanese yam) and limited-time seasonal soba menu items.
Soba-mae Culture
"Soba-mae" refers to the tradition of having an alcoholic beverage before a meal of soba noodles, which is an aspect of Japanese culture that originated during the Edo period.This way, you can enjoy Japanese sake and an a la carte dish while you wait for your soba noodles to boil, and then fully savor your soba noodles once they are ready.Our restaurant offers a "Soba-mae Set" that provides an easy way for newcomers to introduce themselves to this tradition. This set features an appetizer consisting of three different traditional Japanese food items, as well as Japanese sake and soba noodles. It's a great option for solo diners as well.
